Boil the eggs. Heat a pan add 1 tsp oil. Add a pinch of turmeric powder, 1/2 tsp chilli powder, 1/2 tsp coriander powder and a little and add the boiled eggs. Saute for 2 minutes.

Cho the onion, tomato, slit the green chillies.

Again hear the same pan, add 1 tsp oil, add the masalas and let them fry. Add onions & chillies, saute them, once the onions become translucent, add tomatoes, ginger garlic paste and cook till mashy.

In a mixer jar, add 1/2 cup of grated coconut, 1/2 tsp chilli powder, 1/2 tsp coriander powder and half of the cooked onions & tomatoes

Make it a fine paste with adding required water.

Add this paste into the pan and mix together. Add required Salt and curry leaves and let them boil.

Finally add the fried eggs and coriander leaves and allow to cook for 2 minutes.

Tasty egg kurma is ready. Serve hot with aappam, idly, dosa or with rice.
