This is a Nigerian Vegan breakfast I put together as my Nigerian cooking sauce features in the May edition of Vegan Life magazine as one of their favourite products of the month. Wara is made of soya beans grown in Nigeria and is eaten in various parts of the country and cooked in different ways, it is especially popular coated in eggs and fried.

Coming up with this recipe was fun to create as It's so tasty with Obe-Ata from Toyin's Kitchen is sucha versatile base cooking sauce. You can create this Vegan breakfast too. It only took 20 minutes and tasted so good!

I will upload a video of how to buy, prep and cook fried plantain soon.

Ingredients

  1. 7 tablespoonsObe-Ata from Toyin's Kitchen
  2. 1/2 blockfirm Wara/tofu
  3. 1/4 teaspoonTurmeric
  4. 1/2red onion diced
  5. 2ripe plantain
  6. 5-6 teaspoonsvegan seasoning
  7. 1 cloveminced garlic (optional)
  8. 4 tablespoonsAlmond milk
  9. 2 tablespoonswater
  10. 1/3 cupcooking oil
  11. 4basil leaves chopped

Steps

20 minutes
  1. 1

    Mash the wara until it looks scrambled

    Add the almond milk and turmeric and seasoning and set aside for 10 minutes allowing wara to soften and absorb the flavours

    Add 2 additional tablespoons of water to loosen wara (see consistency). mix well and set aside

    Fry onions for 2 minutes on low heat then add 2 tablespoons of water after 2 minutes to soften onions and release flavour and cover allow onions to soften and sauteé

    Gently spoon in the wara and mix well and cover. Cook on low heat for 1 minute allowing wara to scramble well.

    Add the Obe-Ata from Toyin's Kitchen and mix into scrambled wara.

    Add basil and serve with fried plantain. Enjoy
