Sesame Miso Sauce For Yudofu (Tofu Hotpot)

My family loves yudofu (hot tofu) and eat it often even when it's not cold outside, but the usual soy sauce based dipping sauce gets boring, so I thought up this miso sauce.

If you are making a hot pot, dissolve some of this miso sauce in hot water and simmer.
Add some mayonnaise to the miso sauce to make a great dip for raw vegetables. It's so versatile. Recipe by Mirunesan

Ingredients

2 servings
  • 2 tbspMiso (white)
  • 1 tbspSugar
  • 2 tbsp* Ground sesame seeds
  • 1to 1 1/2 teaspoons * Grated garlic
  • 1 tbsp*Soy sauce
  • 1 tbsp* Sesame oil
  • 1Ra-yu
  • 1Green onion

Steps

    Pu the miso and sugar in a bowl, and mix together thoroughly.

    Add the * ingredients to the bowl in the listed order, mixing between each addition. And it's done! You can add the ra-yu spicy chili oil at this stage if you like.

    I recommend using aburaage when you have yudofu. It really goes well with the miso sauce. The remaining soup is so delicious, you'll want to drink it all up.

    Put a generous amount of dashi stock granules (I use two kinds, bonito based and konbu seaweed based) in hot water. Bring this to a boil in a pot on a tabletop cooker. Simmer the tofu and other ingredients in the stock. Scoop out pieces to eat when they are heated through. The udon noodles are simmered in the stock at the very end.

    Put a little bit of the hot dashi stock in a bowl, dissolve some of the miso sauce in it and eat the tofu and other ingredients dipped in the sauce. Add plenty of chopped green onion to the sauce too.

    Since we have small children, we mix the ra-yu in the sauce to taste individually.
