Spicy Stir-Fried Eggplant

I was too lazy to deep-fry the eggplants, so I just stir-fried them in a frying pan.

You can prevent the colour of the eggplant skin from changing by first cooking the skin side very well.
It can be a yummy side dish to pair with drinks if you add an extra kick of red chili pepper. For 2 to 3 servings. Recipe by ruruchirin

Ingredients

3 servings
  1. 3Eggplant
  2. 100 ml※ Japanese soup stock
  3. 4to 5 tablespoons ※ Soy sauce
  4. 3to 4 tablespoons ※ Mirin
  5. 1 tsp※ Chopped red chili pepper
  6. 2to 3 tablespoons Vegetable oil
  7. 1 dashFinely sliced green onion

Steps

  1. 1

    Cut the eggplant lengthwise, make a diagonal cut in each skin, and do the same from opposite side. Then, cut them about 5 cm thick.

    Soak the eggplants from Step 1 in water for about 5 minutes to remove harshness. The eggplants tend to float, so put a plate on the top to fully soak the eggplant.

    Mix the ※ ingredients well. Drain the eggplants from Step 2 thoroughly.

    Heat a frying pan with oil, first cook the skin side of eggplants from Step 2 for about 3 minutes.

    Turn them around and add the ※ seasonings.

    Put the lid on and cook for about 10 minutes. Serve on a tray and sprinkle the finely chopped green onion.
