Plum Jam Cookies (crispy and low-cal)

My son had a day off today in lieu of parent's day on Saturday. I wanted to give him a freshly baked snack, and so I made this with ingredients on hand. It turned out so nicely that I posted the recipe here.

The cookies won't be nicely browned, since they only use a minimum amount of oil and sugar. For best results, if you have time, chill the dough in the fridge once it comes together and shape it. I baked them immediately, but they turned out nicely. Recipe by chikappe

Ingredients

6 servings
  • 50 gramsMargarine
  • 100 gramsJam made of umeshu plums
  • 200 gramsCake flour

Steps

    Combine the jam with the margarine, and mix using a spatula.

    Add the cake flour, and mix the margarine and the flour with your hands until it's crumbly.

    Bring the dough together, and shape it into a 2-cm thick block. Cut it in lengthwise in half, then cut into 2-mm thick slices.

    Place on a baking tray lined with parchment paper. Bake for 25 minutes in a 150℃ preheated oven (adjust the time and temperature to your oven).

    Once they're baked, let cool on a rack.
