Shrikhand Puri

Shrikhand is very easy to make and requires just a few basic ingredients. It is made using hung curd and flavored with sugar, cardamom, and saffron.

Place a mash strainer over a large vessel making sure that the bottom of the strainer does not come in contact with the bottom of the vessel.

Line the strainer with a muslin cloth and pour the curd over it.

Bring all the ends of the muslin cloth together and tie a knot. You can Let the setup be like this overnight or tie the bag of curd over the sink to allow free drainage.

The next day (or after 6-8hrs), remove the thickened curd and add to a bowl.

Stir the curd slowly with a spatula or spoon. To this add powdered sugar, cardamom powder and mix slowly.

Now, using a whisk or an electric beater, whisk the curd by gradually adding the saffron milk, 1 tbsp at a time.

Continue whisking till you obtain a smooth, fluffy, and creamy texture.

Cool, garnish with dry fruits, and enjoy this shrikhand with puris.
