Greens and Lentils Pasta 🌱

Lentils are often so underrated but they are cheap, filling, nutritious and delicious! For this recipe you can used dried or precooked from a tin. It’s cheaper to buy lentils dried, but check cooking instructions as some need to be soaked before cooking or may have a longer cooking time.

If you are cooking your own lentils it would be time, energy and cost effective to cook enough for a few different meals, either to batch cook this recipe or you could try some of my lentil salads, dals and soups.

I like spicy food and so I like to throw a little chopped chilli on at the end. You could add to the pot if everyone likes it spicy or use a little chopped or dried herbs if you have any.

If you have more greens or any other veggies, throw them in. This is a great zero waste recipe.

I always think the capers make a real difference to this. They are cheap if you look for the larger Jared varieties and are great in lots of recipes. #£5meal

Ingredients

20 minutes
4 servings
  1. 500 gPasta (I used brown)
  2. 300 gLentils (tinned, jar or cooked)
  3. 1 tintomatoes
  4. 2/3coves garlic
  5. 1onion (finely chopped)
  6. 1 handfulgreens (fresh or frozen) or add other veg you need to use up
  7. 3 tablespoonscapers
  8. 1little chopped chilli or fresh or dried herbs (optional)

    Cook pasta according to instructions.

    Sauté onion on a gentle heat but don’t let it brown. Add finely chopped or grated garlic and true for 2 or 3 minutes. Add cooked lentils and cook in the onion mixture for a few minutes. Add the tin of chopped tomatoes and the capers and greens if frozen (a few minutes utes before the end if they are fresh. Simmer on a low heat for around 10 minutes (normally around the time that it takes to cook the pasta.

    Drain the pasta. You can add a splash of oil to stop it sticking if you have any.
    Plate into 4 portions and top with the with the lentils. Sprinkle with chopped chilli and/or herbs if you are using.
