To begin, wash the dal well so that the water is absolutely clear. Soak it in water for at least two hours. Drain and keep aside.

Heat 2 tbsp of oil in a pan. Add in the whole jeera and allow it to crackle.

Add in the finely chopped ginger and garlic and saute for a minute.

Add in the chopped onions and saute until translucent. Add in the chopped tomatoes and saute for a minute.

Add in the drained dal and mix well. Cook for a minute or two.

Now add in the dry masalas - salt, Kashmiri red chilli powder, turmeric powder, and hing. Mix well.

Add in 2 cups of water. Mix well. When it starts to boil, lower the heat and cover it with a lid. Cook on low heat until the water dries up. Stir occasionally. Do not add extra water. There should be a bite in the dal.

When the water has dried up, finish it with the juice of one lemon. Mix well.

The Sookhi Dal Amritsari is ready to serve. Sprinkle a bit of garam masala on top and garnish with coriander leaves.
