Pound the curry paste ingredients together: chili peppers, shallots, garlic, salt, shrimp paste, and mackerel meat.

Bring water to a boil and add the pounded curry paste. Add the vegetables that take longer to cook first, like pumpkin. Boil for about 5 minutes. When the pumpkin starts to soften, add the baby corn, zucchini, and king oyster mushrooms. Continue boiling until all the vegetables are cooked. Taste and adjust seasoning.

Season with a little fish sauce. The soup will be slightly sweet from the sweet shrimp paste and the vegetables. At the end, add Thai basil leaves and turn off the heat. Serve hot with steamed rice or enjoy as a warm soup in the morning.
