Ingredients

1 hr 30 mins
4 to 6 persons.
  1. 2 cupsbasmati rice
  2. 2Bay leaves
  3. 1 inch cinnamon
  4. 1 teaspoonJeera
  5. 2-3cloves
  6. 2-3green cardamon
  7. 2-3whole black pepper
  8. 2 teaspoonsalt
  9. as requiredFor vegetables of your choice- I have taken carrots, green peas, beans, small potato, corns, cauliflower
  10. 1 cupyoghurt
  11. 2 teaspoonBiryani masala or tandoori masala
  12. 1/2 teaspoon haldi
  13. 1 teaspoonkashmiri Red chilli powder
  14. 1 teaspooncoriander powder
  15. 1/2 teaspoon garam masala powder
  16. as per tasteLittle salt
  17. 2 teaspoonghee
  18. 2 tablespoonFew strands of kesari dipped in of milk
  19. 1 cupfried onions
  20. 1 cupmint leaves finely chopped
  21. 1 cupcoriander leaves finely chopped
  22. 1/2 teaspoon rosewater
  23. 2-3 dropskerwa water

Steps

1 hr 30 mins
  1. 1

    Wash and Soak rice for 30 mins. Keep a vessel for boiling rice. Once it boils add whole garam masala and rice into it. Cook rice 80 %. Drain the rice.

    Now take deep bowl and add all the vegetables. Now add all the ingredients for marination.

    Fry onions till golden brown.

    Now add 2 tablespoon of oil and put the vegetables and cook it 50%. Rest 50 % will be cooked when we cook Biryani.

    Now take wide and heavy bottomed vessel. Add one tablespoon of oil. Put a layer of. one fourth of vegetables. Spread little rice over it. Spread fried onions, mint leaves and coriander leaves. You can repeat for 2 to 3 layers of rice and vegetables.

    For last layers..add saffron milk, little rose water and kewra water and 2 tablespoon of ghee and keeping on low flame for about 25 to 30 mins.

    Now after 30 mins switch off the flame and leave for 15 mins. Serve with Raita and papad.. relish veg Biryani
