Ingredients

30 minutes
4 servings
  1. 8Parboiled baby potatoes
  2. 1Zucchini (cut into cubes)
  3. 1Capsicum (cut into cubes)
  4. 8-10Baby onions
  5. as required (You can add carrots, mushrooms and broccoli too.)
  6. as per taste Salt
  7. as per taste Black pepper
  8. 2 tspMixed Italian herbs
  9. 3 tspOlive oil
  10. 1 tspVinegar
  11. 1 tspChilli flakes
  12. 1 tspTomato sauce
  13. 1/2 tspSugar

Steps

30 minutes
  1. 1

    First, prepare the marinade for the vegetables. Take a deep bowl. Add 1 tsp olive oil, vinegar, all the herbs, spices and tomato sauce. Mix well.

  2. 2

    Then coat the veggies with this mixture and keep covered for 15 minutes.

  3. 3

    Then preheat oven on grill mode for 10 minutes at 200 °C. Then take a greased glass tray or butter-paper - lined baking tray.

  4. 4

    Spread out the vegetables on the tray. Pour 2 tsp more olive oil on them and mix with a fork. Grill for 20 minutes. Sprinkle Italian herbs on top.

  5. 5

    Take out serve immediately with favourite soup in dinner.
