Nigella, in Cook, Eat, Repeat, used the salted water from cucumbers to make a cocktail. It is a little early here, so I decided to use mine to make a refreshing drink. Perfect for those hot days of summer.

*use only a pinch or two of salt for the cucumbers. A little goes a long way, and you will get plenty of juice if you give your grated cucumber a few squeezes.

  • The water from 1 cucumber that's been salted (eg for tzatziki)*
    Griddled Salmon with Jersey Royals in Minted Butter & Tzatziki
  • 1/4 glasscucumber syrup (for cocktails)
  • 1little cold water if too strong
  • Ice

    Taste the cucumber water for saltiness. If it is just too salty to your taste buds, add cold water until it is no longer reminiscent of sea water 💦

  2. 2

    Mix the salted cucumber juice and syrup in a tall glass. Taste it to see how much syrup it needs. It should be balanced.

  3. 3

    Add ice and drink through a eco-friendly straw ✌️
