Microwave veggies salad with poppyseed dressing

Chop up the pumpkin. Placed it in a microwave safe bowl, add 1 cm water to cover the cubes. Microwave for 2 mins on high. Pumpkin takes longer to get cooked so we are doing it first.

Chop up the rest of veggies

Pumpkin should be done by now. Mix in the rest of veggies in the bowl.

Add 2 cm hot water and microwave on high. 2 mins for a crispy texture or 3 mins for softer.

Once it’s done, pour the water out and add your salad dressing. I’m using poppyseed dressing which gives it a sweet and sour taste. Then you are good to start!
