Ingredients

1 hour 30 mins
4 people
  • 2 cupsbasmati rice
  • 5 cupswater
  • 3cloves
  • 1black cardamom
  • 2green cardamom
  • 5-6black pepper
  • 2bay leaves
  • 1 table spoonghee or clarified butter
  • as per taste Salt
  • 6medium potatoes
  • 2onions verically chopped for frying
  • as per need Oil for frying
  • For gravy
  • 3 table spoonoil
  • 1 teaspooncumin seeds
  • 2onion finely chopped
  • 2tomatoes finely chopped
  • 1green chili finely chopped
  • 2cloves
  • 2cardamom
  • 2-3 piecesginger vertically chopped
  • 1 cupcurd
  • 1 table spooncumin coriander powder
  • 1 teaspoonturmeric powder
  • 1 table spoonred chili powder
  • 1 table spoonkashmiri red chili powder
  • 1 table spoongaram masala or biryani masala
  • 1/4 cupmint leaves
  • As required Coriander for garnishing

Steps

1 hour 30 mins
  1. 1

    Soak rice for half an hour. Rinse water. Add water, black and green cardamom, black pepper, cloves, bay leaves, ghee & salt. Cook 90 %.

    Heat some oil & fry potatoes.

    Fry onions

    Heat oil. Add cumin seeds, ginger & green chili.

    Add onions. Saute till it becomes golden brown in colour.

    Add tomatoes. Saute for 3 to 4 minutes.

    Take curd in mixing bowl. Add cumin coriander powder, red chili powder, kashmiri red chili powder, garam masala & turmeric powder & salt.

    Cool our onion tomato mixture then add curd mixed with powdered spices.

    Then start flame, cook till gravy reduces. Add mint leaves.

    Add potatoes & water. Cook for 5 minutes.

    Dum cook biryani by layers. First put potato gravy then rice. Pour some fried onions. Again put potato gravy. After that rice.keep some fried onions, coriander & mint leaves.

    Heat tawa. Keep biryani layered pot on it & dum cook for 15 minutes.

    Our aloo dum biryani is ready. Serve with vegetable raita.
