Mediterranean omelette (easy)

Ingredients

  1. 5eggs
  2. 1 tbspolive oil
  3. 340 gspinach
  4. 3 tbspsunflower seeds
  5. 1 tbsplime juice
  6. 2/3purple onion
  7. 2spring onions
  8. 1 tbspWorcestershire sauce

Cooking Instructions

    Finely chop your onion and spring onion.

  2. 2

    Cut and squeeze your lime so you can use the juice later.

  3. 3

    Toast sunflower seeds on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.

    Heat olive oil in a pan, add onion, and fry at a lower temperature for several minutes.

    Turn up the heat to medium and add Spinach to your pan and fry for 5 minutes, stirring occasionally.

    Crack your eggs into a bowl and whisk well. Add a pinch of salt and pepper.

    Add your lime and Worcestershire sauce to the bowl and mix.

  8. 8

    Pour your egg mixture on top of your vegetables and heat until omelette is done.

    Add Spring Onion and Sunflower Seeds on top. Enjoy!
