A tasty, creamy dish with the unmistakable aroma of bell pepper—perfect for celebrating being a mom myself!

Wash and dice the bell pepper. Place it in a skillet with some chopped onion, a drizzle of olive oil, and 1/4 cup water (about 60 ml). Cook for about 20 minutes.

Remove the bell peppers from the skillet. In the same skillet, cook the sausages with the casings removed, breaking them up as they cook.

Blend the cooked bell peppers with the ricotta until smooth and creamy.

Cook the pasta until al dente. Add it to the skillet with the sausage, along with a ladle of pasta cooking water and a couple of tablespoons of Parmesan cheese. Toss over high heat, then add the bell pepper and ricotta cream. Mix everything together before turning off the heat. Serve topped with chopped parsley and a few basil leaves.

If you have trouble digesting bell peppers, try using a food mill instead of a blender to remove the skins, which are usually the cause of digestive issues.
