Mash boiled potatoes. Collect all masalas which we need for stuffing in one bowl.

Keep one Kadai or pan. Add one tablespoon oil. When it gets hot, turn the flame low and add masalas. Now add potatoes and green peas. Mix well and let the mixture dry. Add coriander leaves and nuts. Switch off the flame. Let it cool down.

For Red Dough.. peel beetroot and grind in mixer into smooth paste. Divide maida into 4 equal parts. Add beetroot paste with salt to taste, ajwain and moin.. knead the stiff dough with required water Cover and keep it aside for 30 mins.

For green dough.. wash clean and cut spinach and grind it mixer to form smooth paste. Now add this into another part of maida along with Ajwain, salt and moin. Knead the stiff dough with required water. Cover and knead aside for 30 mins

For yellow dough add turmeric in third part of dough along with Ajwain, salt and moin. Knead the stiff dough. Cover and keep aside for 30 mins

For white dough take fourth part of Maida. Add ajwain,salt and moin and knead the stiff dough. Cover and keep aside for 30 mins.

After 30 mins, divide the dough into equal parts. Take one ball and roll it ablong. Now divide it into 2 halves. Put the fillings and apply water on edges. And give the shape of samosas.

Make all the samosas in similar manner.

Keep oil for frying. Keep the flame very low and deep fry them in low flame till it turn crispy. You can air-fry them too by brushing some oil.

Enjoy healthy samosas with green and sweet chutney.
