This is a recipe coming all the way through our roots. My grandmother rocks this beans and actually the only way I can eat them with satisfaction. It’s different, not so hard, and yummy.
Creamy Fresh Broad Bean with Bulghur
This is a recipe coming all the way through our roots. My grandmother rocks this beans and actually the only way I can eat them with satisfaction. It’s different, not so hard, and yummy.
Cooking Instructions

Boil fresh broad beans and put them in a baking tray.

In a small pan, stir fry the onion.
When the onion is translucent, add pepper paste, bulghur, the spices and stir a little bit more.
Then add water and simmer for 2-3 minutes until most of the water is absorbed.

Put the bulghur mixture in the baking tray where the beans are.

Add milk and some more water until the beans are covered.
And bake it in the oven set max temperature setting for 25-30 minutes until the liquid is reduced and everything is tender.

I created this recipe because I wanted to make bean rice without the beans getting wrinkled.It wasn't flavourful when I added the peas at the end. So I tried adding the water used to boil the peas in the beginning, and it made the rice a lot more delicious.The key to making the peas fluffy is to keep them in the cooking water until they are completely cooled down.
