I forgot to buy demi-glace sauce, so I was trying to make something similar, then this was delicious too ! Since then it became a dish that I often make.

Steps

Slice the onions and carrot into 2mm thick (make the lengths uniform.)

Slice the pork fillet 1cm thick and sprinkle salt and pepper to prep.

Mix all ● ingredients in advance.

Put the meat and flour in a plastic bag and shake to coat evenly.

Heat vegetable oil in a pan and put the meat. Grill both sides on medium heat and cook through.

Keep the meat in a shallow container.

Wipe the pan you used to grill the meat and heat vegetable oil in it again. Add onions and carrots at the same time and stir fry on medium heat.

When the onions are wilted, add the sauce from Step 3. Simmer to reduce the sauce a little thicken the sauce.

When the carrots are cooked through, put the meat back in the pan and coat well with the sauce.
