Boiled Fava Beans with Garlic and Mint

Enjoy fava beans from April to July. They’re delicious raw or cooked, with garlic or onion, and make a great side dish or even a main course. As legumes, they’re rich in protein and carbohydrates, so they can be a complete meal on their own.

Steps

  1. 1

Shell the fava beans by splitting the pod in half and sliding your thumb along the pod to remove the beans. Place the beans in a bowl and rinse them well under running water. Cook the beans in boiling salted water for about 10 minutes, or until they are tender.

  2. 2

Drain the beans and place them in a bowl to cool. In a mortar, crush the peeled garlic and mint together, then add olive oil and mix well to combine.

  3. 3

Season the fava beans with pepper and toss them with the prepared dressing.
