Shell the fava beans by splitting the pod in half and sliding your thumb along the pod to remove the beans. Place the beans in a bowl and rinse them well under running water. Cook the beans in boiling salted water for about 10 minutes, or until they are tender.

Drain the beans and place them in a bowl to cool. In a mortar, crush the peeled garlic and mint together, then add olive oil and mix well to combine.

Season the fava beans with pepper and toss them with the prepared dressing.
