Steps

Heat a kadhai with oil. Splutter cumin seeds. Put chopped garlic, onion, fresh green chillies, curry leaves and a dash of hing.
Saute. Then add ginger garlic paste and saute for sometime. Next add tomato puree. Mix all well and continue cooking. - 2
Add salt, turmeric powder,red chilli powder, coriander powder, cumin powder and mix. Cook at slow flame. Add little water so that masala does not burn. Cook till masala leaves oil. A nice aroma fills your kitchen.

Next add the boiled sprouts and give a gentle mix. Add pav bhaji masala or any curry powder and mix. Cover and cook for 2 minutes.

Finish off by adding garam masala. Add finely chopped coriander leaves. Usal is ready. If you have mutton/ chicken gravy/ rasa add that to enhance flavour. Adjust consistency as per your requirement. Usually it is runny...

Serve with hot butter toasted pav, raw onion, lemon wedges.
While serving..put usal in a bowl, upon that put farsan/any mixture, raw chopped onion and squeeze lemon juice, add finely chopped coriander leaves.
Keep extra bowl of usal, farsan, chopped onion, fresh green chillies, lemon wedges, mutton / chicken gravy for extra service. - 6
