Lift the pastry out of the packet and line a metal flan dish. Trim with a knife and with a fork dot all over the base.

Put it in the fridge for 20 minutes to rest. Heat the oven to 180 degrees. Then line the pastry with baking paper, pour in some baking beans or dried chick peas, bake in the oven for 15 mins, then lift out the baking paper and beans. Place back in the oven for 5 mins.

Whilst this is all cooking fry off the bacon lardons on a medium high heat. Then set to the side.

Whisk the eggs, sour cream and cream together add seasoning. Set to the side.

Chop half the cheese into cubes then grate the rest.

Now the pastry is baked add the diced cheese and lardons. Then pour the egg mix, add the grated cheese and bake in the oven for a further 25 minutes until the quiche has a good wobble!
