Kesariya Katli (Kaju katli)

This kaju katli is a mithai made with cashews.The best part of this mithai is that it lasts for long . And does not get spoiled soon .That is the reason in many festivals and in marriages this particular mithai is definitely a part and parcel . It is very smooth, soft ,melt in the mouth sweet .Enjoyed by All! It is always recommended to keep the kaju in the freezer for overnight before making its katli. Next day, grind it to a fine powder on pulse mode of the mixie,so that the oils of the kaju remain intact. Seive it and keep aside.

Now in a non-stick kadai, add sugar, water and cook. Meanwhile prepare the two layer butter paper and grease them. Keep aside.

Now cook the chashni till one string consistency. Lower the flame and add the kaju powder. Mix nicely till all lumps are dissolved and you get a creamy texture. Add Kesar mixture and cook till the kaju mixture is well combined and it starts to thicken.

To check weather it is ready,put it in a plate and try to roll,if it rolls easily,that means it is done.Now switch off the gas and keep stirring.

You will see that as it cools you can easily make a dough kind. Add ghee to it. Now make a round roll and spread it in between the two greased butter paper and roll it with the rolling pin.

Cut them in your desired shape apply silver leaf (optional).Store it in airtight jars and enjoy them for weeks !!
