Ingredients

3-4 people
  • For rajkachori dough
  • 1 1/2 cup maida /
  • 1/2 cup rava/ suji
  • 1/ 2 tablespoon baking soda
  • 1/2 tablespoon salt
  • 2 tablespoonhot oil
  • 1 cupwater (for kneading,)
  • as requiredOil for fry
  • For chaat
  • 1potato boiled and peeled
  • 1/2 cup chana/ chickpea (boiled)
  • 1/2 cup green mung daal (boiled)
  • 1 cupcurd
  • 1/2 cup green chutney
  • 1/2 cup tamarind chutney
  • 1 tablespoonkasmiri red chilli powder
  • 1 tablespooncumin powder
  • 1 tablespoonchat masala
  • as per taste Salt
  • 1/2 cup sev
  • 1/2 cup boondi (optional)
  • 1/2 cup pempgranet
  • 2 tablespoononion (finally chopped)

Steps

    Firstly, in a large mixing bowl take 1½ cup maida, ½ cup rava, ¼ tsp baking soda and ½ tsp salt. mix well.

    Pour 2 tbsp of hot oil over flour and crumble

  3. 3

    Add in water as required and knead 5 minutes

  4. 4

    Prepare smooth and stiff dough adding water as required

  5. 5

    Now pinch a ball sized dough, and flatten it.

  6. 6

    Grease the ball with oil to prevent from sticking.

  7. 7

    Roll slightly thick like poori using a rolling pin

  8. 8

    Drop the rolled kachori into the hot oil

  9. 9

    Splash oil gently over the poori and press with the spoon to puff up

  10. 10

    Flip over and fry the kachori until golden brown all over

  11. 11

    Drain off the kachori over kitchen paper allowing to cool completely.

  12. 12

    Now take a poori and make a hole. poori turns crisp once cooled completely (after 2 hours)

  13. 13

    Stuff with 1 tbsp boiled potato, 1 tbsp boiled chana and 2 tbsp boiled moong dal.

    Also pour 2 tbsp curd.
    now pour a tsp of green chutney and tamarind chutney.

    Also sprinkle chilli powder, cumin powder, chaat masala, and salt

    Further drizzle half tsp of curd, green chutney and tamarind chutney.
    Pgarnish with 2 tbsp sev, 1 tbsp boondi, 1 tbsp pomegranate, 1 tsp coriander and 2 tsp onion.

    Finally, enjoy raj kachori immediately as a chaat
