Ingredients

2 servings
  1. 1onion chopped
  2. 1carrot peeled and chopped
  3. Olive oil
  4. Handfulmushrooms
  5. Tomato puree
  6. 1 canchopped tomatoes
  7. Pasta of choice
  8. Salt
  9. Parmesan cheese

Steps

  1. 1

    Chop onions finely and put in sauce pan with olive oil to gently fry.

  2. 2

    Peel and chop carrots and add this to the saucepan.

  3. 3

    Add mushrooms that are chopped to saucepan

  4. 4

    Add tomato puree and mix until combined. Leave for 2 mins.

  5. 5

    Add chopped tomato tins. Add salt. Cover and leave to simmer until well thickened.

  6. 6

    Meanwhile cook pasta to instructions on packet.

  7. 7

    Serve together with parmesan cheese
