Ingredients

  • 1 lbsweet Italian sausage
  • 1 lbhot Italian sausage
  • 3large red bell peppers
  • 1onion
  • 2small zucchini’s
  • Several garlic gloves crushed
  • 1 tspOlive oil
  • Salt, pepper, garlic powder
  • 1 lbwhole wheat pasta
  • Goat cheese to crumble on top
  • 1 cupMy roasted red pepper sauce
  • 1/2 cupchicken stock to thin out sauce

Steps

  1. 1

    Roast the chopped veggies with seasoning and olive oil for 1 hr at 400° add the sausage for 30 min more to the same pan

  2. 2

    Cook pasta al dente and return to pot with broth and sauce. Add chopped sausage and veggies. Top with crumbled goat cheese
