Edamame & Fetta Cheese Salad

Edamame, young Soy Beans, has become so popular and it is widely available in Australia. I often purchase Frozen Edamame Beans that are already removed from pods. Edamame Beans are absolutely versatile and can be used for so many dishes just like Frozen Peas. Today I simply mixed with Fetta Cheese, Cucumber and Avocado. This can be a good side dish, and great for drinking, too.

Fetta Cheese is very salty. You can reduce the salt by soaking Fetta in cold fresh water for a few hours. *Note: I often do this because of a health reason.

Cut Fetta, Cucumber and Avocado into 1cm cubes.

Place Olive Oil and Garlic in a mixing bowl. Add Edamame and Cucumber, season with Salt & Black Pepper, and mix well. Add Avocado and Fetta Cheese, and gently combine.
