Ingredients

  1. 2.5 cupsflour
  2. 1 cupfine semolina
  3. 3/4 cupanimal ghee
  4. 3/4 cupolive oil(you can use olive oil only instead of the ghee)
  5. 1/4 cupicing sugar
  6. 1/4 cuppowder milk
  7. 1/4 cupcookie spices(aniseed, fennel and mahleb)
  8. 1/4 cuproasted sesame seeds
  9. 1 tbspnigella seeds

Cooking Instructions

    In a bowl add the ingredients listed above and mix them very well so the flour absorbs the oil
    Leave the dough in the fridge overnight

    To knead the dough
    Mix one cup of dissolved aniseed with one cup of hot water and leave it aside so it becomes warm

    Add one tbsp sugar with a teaspoon of yeast and let it rise

    Knead the dough until you have a cohesive dough

    Add a little bit of water gradually if needed
    Leave it aside to rest for 1/2hr

    3-stuffing

    500g mashed date
    1tbsp oil
    1/4tsp mahleb
    1/4tsp ground cinnamon

    Mix all the ingredients together and divide them into small balls equal in size
    Roll each ball with hands so you have small rope

  8. 8

    Cookies formation
    Divide the dough into equal sized ball, roll each one and stuff it with one of dough and make a circle shape with a whole in the middle

    Line the cookies in an oven tray
    Bake them in a preheated oven at 180°C in the middle shelf until the turn golden on both sides

  10. 10

    Leave them aside so they cool down then serve
