This is a classic recipe in our home that we've been making for a long time.
It's also great if you add egg (my mother passed this on to me).

2) It also works if you just use katakuriko.
3) Don't fiddle with the chicken too much when you start deep frying.
3) Start frying over medium heat, then increase to high heat at the end to get a crispy finish. Don't overcook if you are using chicken breast. Recipe by Yuuyuu0221

2 servings
  1. 280 gramsChicken breast or thigh
  2. 1 tbsp●Soy sauce
  3. 1 tbsp●Sake
  4. 1 tsp●Mirin
  5. 1 tsp●Garlic (grated)
  6. 1 tsp●Ginger (grated)
  7. 2 tbspor more ◎Cake flour
  8. 2 tbspor more ◎Katakuriko
  9. 1Vegetable oil

Steps

  1. 1

    Cut the chicken into bite-sized pieces. Mix the ● ingredients together. Marinade the chicken in the ● ingredients for 20-30 minutes.

  2. 2

    Put the ◎ ingredients in a plastic bag, and add the chicken. Shake the bag to coat the chicken, then remove the excess flour.

  3. 3

    Deep fry in oil at 170C.
