i adapted this recipe from bly the ponytail parades. it was close so i tweaked a tad and 3 out 4 said it was spot on. i never had at olive garden so i dont know what its supposed to taste like but omg! it was still oh soooo good!

Olive Gardens Chicken & Gnocci Soup

Ingredients

6 servings
  1. 4 tbspsalted butter
  2. 1 tbspolive oil
  3. 1 1/4 cupdiced white onion
  4. 2 cloveminced garlic
  5. 1/4 cuppacked all purpose flour
  6. 1/4 tspgarlic powder
  7. 1 quarthalf and half
  8. 1 3/4 cupwater
  9. 2 1/4 tsppowdered chicken boullion
  10. 1/2 tspdried thyme (slightly heaping)
  11. 1/2 tspdried parsely flakes (slightly heaping)
  12. 1/4 tspground nutmeg (slightly heaping)
  13. 1 1/4 cupshredded carrots
  14. 1 1/4 cupchopped fresh baby spinach leaves
  15. 1 1/4 cupsmall cubed boneless skinless chicken breast
  16. 1 lbgnocci thawed or fresh
  17. 1 pinchsalt and pepper to taste

Cooking Instructions

    in a large pot melt butter with oil on medium-medium high heat.

    add chicken,onion and minced garlic.

  3. 3

    cook until chicken is no longer pink and onion is translucent.

  4. 4

    slowly add flour stirring constantly.

  5. 5

    one combined and mixed well, slowly stir in half and half, wisking continuasly.

    continue cooking and stirring until its starting to thicken.

    in a bowl combine all seasonings, the powdered boullion and the water. wisk well.

    add seasoning water to pot and mix well.

    stir in spinach and carrots.

    add gnocci and salt and pepper to taste.

    bring to a slow rolling boil stirring often.

    continue to boil until gnocci is fully cooked.

    let stand at least 10 minutes stirring every few minutes. it will thicken more as it cools.

    serve hot with fresh grated parmesan or romano cheese.

    this served 4 heavy eaters with leftovers for 2 more servings. served with buttered french bread.
