Easy Stir-fried Somen Noodles with Lettuce and Ham

I always have somen on hand year-round. This is my family's favorite stir-fry recipe.
As soon as the somen noodles are cooked, they're ready to be tossed in the pan, so work quickly. It's hard to cook the noodles once they harden. Recipe by Donpintan

Steps
- 1
Make scrambled eggs and set aside. Try not to overcook it!
- 2
Julienne the ham and lettuce.
- 3
Boil somen noodles. Remove from the pot when it's still al dente, rinse in water to cool, and set aside.
- 4
Fry ham in vegetable oil, then add the noodles.
- 5
Add the remaining ingredients and the chicken stock powder. Stir-fry and season with salt and pepper.
- 6
If you like, add Ra-yu spicy chili oil. I like to add a lot.
- 7
It's easy and finished within 15 minutes so definitely give it a try.
