Simmered Spare Ribs in Red Wine Sauce (with a pressure cooker)

This was a recipe that my mother used to make in a regular pot. A pressure cooker makes it easier to make. Besides, you don't need to sauté the onion to bring out the sweetness.
My mother made it often when we had guests. She must have had confidence in it.

If you don't have a pressure cooker, add water to cover the ingredients at Step 2-3, and simmer in a heavy pot for 1 to 1.5 hours. It's preferred that you sauté the onion until golden brown in this case.
If there is leftover sauce, use it to dip a piece of bread in or it can be a pasta sauce as well. Recipe by kotori2010

Ingredients

4 servings
  • 500 gramsPork spare ribs
  • 11/2- Onion
  • 3 tbsp★ Ketchup
  • 300 ml★ Red wine
  • 1 tsp★ Salt
  • 1★ Coarsely ground black pepper
  • 1to 2 leaves ★ Bay leaf
  • 1to garnish Parsley

Steps

  1. 1

    Heat a small amount of oil in a skillet, brown the spare ribs to seal in the flavor. (If you are using a non-stick skillet, you don't need any oil.)

  2. 2

    Transfer the spare ribs from Step 1 into a pressure cooker. Add the onions, cut in wedges, and all the ★ ingredients, cover and turn on the heat to high. Once it comes to a boil and the weight starts to move, reduce heat to low.

  3. 3

    Continue simmering over low heat for 15 minutes while checking to see if the weight is still moving. Turn off the heat and let it sit to lower the pressure.

  4. 4

    Now you should have tender and fall-off-the-bone spare ribs. Transfer to a serving plate, sprinkle on some parsley if desired and it is done.
