Perfect sweet and savory pot roast

Ingredients

5-7hrs
4-6 servings
  1. 3 lbShoulder roast
  2. 1-2 tspCrushed fennel seeds
  3. Salt
  4. Pepper
  5. Flour
  6. 1/4 cupApple cider vinegar
  7. 1 Cubebeef bouillon
  8. 1/2 cupFruit cocktail juice
  9. 1 bagPearl onions
  10. 8-10New potatoes
  11. 3-5carrots
  12. 1/4 cupcanola Oil
  13. 2 cupsWater

Cooking Instructions

  1. 1

    Use instructions on bag of pearl onions to prepare onions. Once cooked, remove outer layers.

    Cut carrots into 1-2" lengths. Add potatoes, juice and cube of bouillon to bottom of pot lining up potatoes evenly.

    Use spoon to crush fennel seeds.

  4. 4

    Mix the flour,salt, and pepper. Then cover all sides and edges of roast. With edge of plate pound the flour mixture into the sides of roast.

    Add oil to pan, and heat to medium/ high heat. Sear all sides of roast.

  6. 6

    Add roast, rest of vegetables, apple cider vinegar, and 2 cups water to top of roast. Add crushed fennel seeds.

  7. 7

    Cover and cook over low heat 6-8 hours or high heat for 4-6 hours.
