Cooking Instructions
- 1
Purge crawfish by setting them in a container and washing them off until the water is clear.
- 2
Cut onions, garlic, Lemons, corn potatoes, and limes. Place into hot water with dry and liquid seasoning and two sticks of butter.
- 3
FYI:the above items need to be in a basket. Boil for 15 minutes. Let saok for ten minutes.
- 4
Take out and place in cooler. *potatoes will continue to cook so make sure they are al dente.
- 5
Bring pot back up to boiling and put in crawfish with two additional sticks of butter.
- 6
Cook until crawfish are red and floating. (should be less than six minutes)
- 7
Turn off your burner and add the frozen shrimp and crab. Let soak for as long as you want. Rule of thumb. Heat intensity rises every ten minutes. I would start checking for heat after thirty minutes.
- 8
Add crawfish to the cooler and mix.
- 9
Your level of spice is dependant upon you. If you want it more or less spicy make sure your soak time corresponds. More time means more spice. Be sure to not overcook as crawfish can become mushy.

Cajun Corn Cajun Corn
So delicious!! I love the sweet and spicy in this dish. I usually use 1 green cayenne and 1 red cayenne and it comes out perfect. If you only like a little heat, you can substitute the cayennes with green or red bell peppers to tone it down a little. Tiffany Rubbert -

Cajun Crawfish Cheesey Pasta Cajun Crawfish Cheesey Pasta
This is very simple and satisfying on a weeknight. You can use shrimp instead of crawfish if you can't find them. Using a cajun spice blend also helps make this fairly simple and quick. The Velveeta is necessary to keep the cheese sauce creamy and emulsified, so don't skip it. If you can't find Velveeta, use american cheese slices. Any shredded cheese can be used from Cheddar to parmasan. Lance Wilson -
California Farm Crawfish for Etouffee Dinner California Farm Crawfish for Etouffee Dinner
Crawfish is for Lent, shipped here cooked and frozen, delicious enough to make you forgo meat for forty days. Only 30% of the cooked body weight of crawfish is used for etouffee, only the tail part, half of that shell, half of that meat. The rest I use to make bisque soup, and make puree. Farmers dont like to waste anything.Etouffee means smothered in a sauce with seasoning. You can make cajun or creole seasoning at home. I choose creole over cajun seasoning this time, it sounded more fragrant, and it tastes delicious. The left over crawfish is first used to extract flavor for bisque soup, then ground into a puree in the food processor for catfood. Cookpad frowns on posting pet food dishes, so contact me if you want the cat food recipe.Served with a bed of long grain rice to absorb the cream sauce. Hobby Horseman
