I used ginger and garlic for aromatic rice dish. Which gives flavour. If desired, you can add a few peas to it for extra colour.

I used ginger and garlic for aromatic rice dish. Which gives flavour. If desired, you can add a few peas to it for extra colour.

Wash and soak rice for 4 minutes. Drain the water and keep aside. Heat ghee in kadai. Add chopped onion. Fry for few minutes. Add 1/2 tsp salt so that the onion cooked fast. Then add cumin seeds and whole garam masala. Saute it in low flame. Add rice mix well and fry for 3 minutes. If you fry rice 2 to 3 minutes in slow flame the rice will not stick to each other.

Add the water to the mixture in the pan. Reduce the heat. Cover and cook until steam comes out through the lid.

Check to use whether the rice is cooked. Transfer the fried spicy rice to a serving dish and garnished with the fried onions, chopped fresh coriander leaves. Serve hot..................spicy fried rice with raita and butter paneer
