Don't throw away the bones of mutton or chicken after making boneless meat at home. There are still a good amount of meat on the bones so turn it into broth to make other kinds of soup or make stew by adding veggies to it.

Boil and cook the Mutton bones and make the broth before hand for about an hour or two, by that time prepare the veggies and other ingredients.

Heat oil and butter and Add in the whole spices and then the onion and saute. Add the ginger garlic paste and saute it, then the vegetables and saute it, beginning with the tough vegetables first. Add the grounded black pepper, salt and fresh chilli and saute and cook for few minutes. If required, add broth to prevent the veggies from burning and sticking to the vessel.

Then add the broth along with the bones as some meat is also there, which you can have it. Boil and cook in a closed vessel till the vegetables are well cooked, add hot water if needed to adjust the amount of soup needed. Check salt and pepper and add if needed. Add a dollop of butter, if you love it. Once done serve with breads, I love it with Steamed Rice too.
