Ingredients

  1. Pumpkin/Squash/Kabocha
  2. Pink salt
  3. Hard boiled Eggs

Steps

  1. 1

    Chop pumpkin into chunks (leave some of the skin on). Place in pot. Sprinkle with pink salt and let it sit for 10-15 mins. Some water will be drawn out. Retain the water and add in another 2-3 tbsps of water.

    Cover pot and bring water to a boil. And then lower the heat to medium low and continue to cook for 10-15 mins till pumpkin is soft.

    Add in eggs and mashed together. Enjoy!

This looks super healthy! I always end up with excess butternut squash after making risotto & usually make soup - but next time I will make this instead.
