Beat two eggs until mixed, then fry into thin sheets. Blot excess oil and let cool. Reserve a small portion of the beaten eggs to add to the soup.

Roll the egg sheets and slice into strips.

Sauté the tomato with a little olive oil until soft. Add broth and bring to a boil. Stir in the reserved eggs, add enoki mushrooms, and season with salt and pepper. Add the egg strips, bring to a boil, then turn off the heat. Garnish with green onions.
