Bites of sweet apples simmered with rolled oats, coconut milk, cinnamon and nutmeg powder, jaggery, freshly grated coconut and nuts all added up to an absolutely delicious way to start the day. It is delicious even without adding nuts to it. Adding nuts is optional.

Add the oats to a pan and roast it for about 5 minutes.

Making of the dish becomes easy and perfect if all the ingredients are kept ready. Only the apple should be peeled and chopped at the time when it has to be added to the cooked oats.

Add coconut milk, water and salt to the oats and cook on low flame for about 5 minutes. You can add only water or only coconut milk if you want. I had only a cup of coconut milk so I added remaining water to it.

When the oats are cooked, add the chopped apples and mix it.

Next add cinnamon powder and nutmeg powder and mix it well. These powders will lend a good flavor to the dish.

Now add the crushed jaggery and cook for a minute so that the jaggery melts and the apple cooks. Add freshly grated coconut and mix it well. Add the crushed nuts and raisins and mix well. This is optional.

Apple Cinnamon Oats is ready. To garnish with blanched almonds, soak almonds in hot water.

Scoop into serving bowls and top with blanched almonds or any nuts, if desired. Sprinkle some cinnamon powder and enjoy.
