Ingredients

30 minutes
Serves 2 raciones
  1. 1.5lbs. fresh salmon fillets
  2. 16thick green asparagus
  3. 2tablespoons of extra virgin olive oil from Spain
  4. salt
  5. pepper
  6. 2tablespoons of extra virgin olive oil from Spain (Hojiblanca)
  7. For the yogurt sauce:
  8. 1tablespoon extra virgin olive oil from Spain
  9. 1creamy yogurt
  10. the juice of ½ lemon
  11. salt
  12. 1bunch of dill

Cooking Instructions

    Prepare the yogurt sauce by mixing a tablespoon of extra virgin olive oil from Spain, the yogurt, lemon juice, salt and dill in a bowl, beat together with a whisk and set aside until ready to serve.

    Using a peeler, create thin shavings of asparagus (you can save a few of the tips for garnish). Sauté them using two tablespoons of Extra Virgin Olive Oil from Spain, salt and pepper.

    Brush the salmon with two tablespoons of Extra Virgin Olive Oil from Spain so it doesn't stick to the pan, brown it for around 5 minutes on the first side and 3 minutes on the other side, depending on the thickness of the fillets. To prevent the fish from breaking apart, flip it using a large spatula.

    Serve the salmon with the shaved asparagus and yogurt sauce. If you want, you can also serve the tips along with the shavings.
