Carbonara is my favorite dish and I want to eat it a lot at home! You can never cook too much as this can always make you or someone in the family want to have seconds.
Be sure to remove the pan onto the damp cloth when pouring the sauce into the pasta. This will prevent the eggs from scrambling. Recipe by Babette29

Prepare the sauce. Whisk the ingredients listed in A all together in a mixing bowl. Slice garlic and onion. Cut the bacon into 1.5 cm pieces. Set aside.

Cook pasta for 1 minute less than instructed on the package.

Heat olive oil and the garlic in the skillet until fragrant and then sauté the bacon. When the bacon gets brown, add the onion.

Pour in the heavy cream and 1 ladle of the pasta cooking water. Add the pasta.

Immediately move the pan from the heat onto a damp cloth. Pour the egg mixture into the pasta, whisking quickly.

Serve at once garnished with roughly grated black pepper and grated cheese as you wish.
