Fresh Plum Chutney

Plums are lucious ruby coloured gems that taste a bit sweet and a bit tangy. .Full of vitamin c , these are very healthy. This fruit come in summers ,full of antioxidants. Plum jam is very common ,but honestly I prefer the desi style chutney over jams .My this chutney is so beautiful to look ,such a natural pretty colour I got . So satisfying and the white roasted melon seeds gave a nutty and pearly look and crunch to it which enhanced it more . It has it all, to make your taste buds hop. A bit tangy ,a bit sweet, a bit spicy with apt amount of salt to balance it all together .What else do we want in a chutney. I found that adding this to my favourite chaat & bhallas gave it a really beautiful colour and tasted heavenly!! This can be used with your parathas, breads. This can be stored in the fridge for two weeks and if you want to keep for some more time add in half tsp of apple cider vinegar ,which will act as a preservative. #boxweek16 #sangitakalra

Wash the plums, chop and deseed them.Grind it to a fine paste. No need to add any water while grinding, just a bit of water to clear the jar.Now pour this to a non-stick deep pan & give it a boil.

Add sugar and when it thickens a bit add all the rest of the left ingredients one by one. Mix and check the seasoning if your plums are very tangy,then you might want to add a little more sweetness. Check at this time, if you want more spicy add more red chilli powder.See it depends on your taste what kind of chutney you want. For my family this tasted yummy.Cook till it thickens,add the roasted melon seeds. Enjoy this with your favourite food and snack.
