Ingredients

  • 2 Tablespoonsevoo
  • 1 teaspoonsalt
  • 1lg shallot, diced or sub onion
  • 1 clovegarlic minced
  • 1 pintsliced mushrooms
  • 3 cupsveg broth warmed
  • 1/2 teaspoonpepper
  • Pinchnutmeg
  • 1 Tablespoonsfresh thyme, chopped, garnish
  • Balsamic vinegar, garnish
  • 1 1/2 cuparborio rice

Steps

  1. 1

    Heat broth

  2. 2

    On hihg heatSaute oil, shallot, garlic about 3 min

  3. 3

    Add mushroom and rice, saute 3 min

  4. 4

    Reduce to med heat, add broth 1 cup at a time, til absorbed

  5. 5

    Once all absorbed, add salt and pepper to taste, serve

  6. 6

    Garnish with thyme and drizzle balsamic
