Stickjaws Toffee

Since my childhood, I have been having this toffee. Dehradun my native place, is very famous for bakery stuff . There used to be one Baker who use to sell these & this used to get finished within a few hrs ..Thought of trying this at home, made it twice. The first was not that chewy but I didn't lose heart, tried again and bravo, this second one turned out to be too yummy and its taste is very close to the original one!! Take a tray, spread aluminum foil on it, and grease it nicely. Keep aside
Now in a deep non-stick pan add in castor sugar & melt it on medium to low flame till the sugar caramelizes. Add in cream, you will see that all the sugar gets lumpy. Don't worry, on low flame and keep stirring continuously this will get dissolved. - 2
Then add in sugar to it and continue to cook till all sugar melts. Now add liquid glucose and honey to it. Keep cooking till it really turns thick. To check if it's done pour a drop of this mixture in a bowl having some water. If the mixture is rolling into a ball kind and not spreading in water it means it's done. At this time add essence and butter. Mix for few seconds.

Now pour this in the greased tray spread it and let it set for 1 hour or so. Cut them with a sharp knife in rectangles/squares or roll them in a cylindrical shape.
Sit back on your chair, listen to your favorite music & roll this toffee in your mouth. Slowly it will melt in and your taste buds will ask for more as these are very addictive. You will love chewing it and swrilling it.I am sure it will remind you of childhood. Wrap leftover with butter paper & store in an airtight jar.
