Pasta Napolitan for Adults - A Cafe-style Lunch

The pasta napolitan I have at a certain cafe is a bit spicy and I love it. So I copied their flavor. When I tried adding chorizo instead of bacon, it tasted awesome, so that's what I used. We enjoy this with the addition of seasonal vegetables.
Since the pasta is combined at the end in the pan with the other ingredients, stop cooking it when it's still a bit firm. The curry powder is a hidden ingredient. There are differences in curry powder depending on the brand, so don't add too much! Besides brussels sprout you can use nanohana, mushrooms, or whatever seasonal vegetables at hand. Combine the ● flavoring ingredients in a small bowl. Slice the onion and green pepper rather thickly. Cut the brussels sprouts in half. Slice the chorizo into 2-3 cm diagonals.

Bring plenty of water to a boil in a pot. Add salt and pasta, and cook the past for 1 minute less than the cooking time indicated on the package.

Once you start boiling the pasta, heat olive oil in a pan. Add the onion, bell pepper, brussels sprout and chorizo in that order and saute.

When the vegetables are more or less cooked, add the combined ● ingredients and combine everything together. Add about 1 ladle full of pasta water and the cooked pasta, and toss.

When everything is well mixed together, it's done. Sprinkle black pepper just before eating and enjoy!
