Ingredients

Serves 4 servings
  1. 4potatoes
  2. 1onion
  3. 3 tablespoonschickpea flour (besan) (about 24 grams)
  4. 1 1/2 teaspoonssalt
  5. 1/2 teaspoonred chili powder
  6. 4 tablespoonsvada pav chutney
  7. 1 teaspoonoil (for the spice mix)
  8. 1 1/4 cupsoil (about 300 ml) (for frying)
  9. 7-8curry leaves
  10. 1 teaspoonmustard seeds
  11. 1 teaspoondried mango powder (amchur)
  12. 8dinner rolls (pav)
  13. 1/4 teaspoonasafoetida (hing)
  14. 1/4 teaspoonturmeric powder
  15. 1/2 teaspoonbaking soda

Steps

  1. 1

    Boil and peel the potatoes, then mash them.

  2. 2

    Heat oil in a skillet and add mustard seeds and curry leaves. Let them splutter.

  3. 3

    Add finely chopped onion and sauté until golden.

  4. 4

    Add the mashed potatoes, salt, red chili powder, and dried mango powder. Mix well and turn off the heat.

  5. 5

    In a bowl, combine chickpea flour, asafoetida, salt, a pinch of turmeric powder, red chili powder, and baking soda. Mix well. Add water to make a thick batter.

  6. 6

    Shape the potato mixture into small balls, dip them in the chickpea flour batter, and fry in hot oil over medium heat.

  7. 7

    Once crispy, remove and place on a plate.

  8. 8

    Spread chutney on both sides of each dinner roll, place a vada inside, add some dry chutney, and fried green chili if desired.

  9. 9

    Vada pav is ready to serve.
