Ingredients

4 servings
  1. 130 gramsCake flour
  2. 1/2 tspBaking powder
  3. 60 gramsButter
  4. 60 gramsSugar
  5. 1Egg
  6. 2 tbspMilk
  7. 100 gramsBlueberries (fresh)
  8. 10drops Brandy

Cooking Instructions

    Bring the egg, milk, and blueberries to room temperature. Sift the flour and baking powder together twice.

    Melt the butter in a double boiler (or in the microwave) and transfer to a bowl. Preheat the oven to 160°C.

    Add the sugar to the melted butter and mix with a whisk. Add the beaten egg and milk one at a time, mixing well with each addition. Sprinkle in the brandy.

    Change to a rubber spatula and fold in the blueberries.

    Add the sifted dry ingredients. Mix with a rubber spatula until not powdery anymore, but don't over-mix or kneed the dough.

    Spray oil onto the baking pan and use your fingers to spread it until coated (or you can line with baking paper).

    Pour the batter into the pan and smooth out the surface. Tap the pan's edges to remove the air from the batter.

    Bake at 160°C for 35 minutes. When a toothpick or skewer inserted in the center comes out clean, it is done.

    Remove the cake from the pan and let cool on a rack. Seal it in a plastic bag to prevent drying out.
