Preheat oven to 400°F. Toss potatoes with 2 tbsp olive oil, salt, pepper, rosemary, and thyme. Roast for 25 minutes.

Add zucchini to potatoes, toss, and roast together for 15 minutes more.

Toss salmon cubes with 2 tbsp olive oil, salt, and pepper. Pan fry until golden and cooked through.

Mix mayonnaise, sweet chili sauce, rice vinegar, and sriracha to make the sauce.

Layer roasted potatoes and zucchini in bowls, top with salmon, and drizzle with sweet & spicy mayo.
Tips
For extra flavor, consider adding fresh herbs or a squeeze of lemon juice before serving.
