Ingredients

2 servings
  1. 1 block(about 400g), drained and crumbled Super firm tofu
  2. 230g, chopped Green beans
  3. 1, diced Red bell pepper
  4. 6, chopped Scallions
  5. 1, diced Tomato
  6. 5cloves, minced Garlic
  7. 1cup, thinly sliced Basil leaves
  8. 4 tbspSesame oil
  9. 1 tbspChili oil
  10. 60 mlSoy sauce or coconut aminos
  11. 2 tbspLime juice
  12. 2-3 tspPure maple syrup
  13. 2servings (for serving) Jasmine rice
  14. as needed(for topping, optional) Crushed peanuts
  15. a fewpinches Salt

Steps

  1. 1

    Heat 3 tbsp sesame oil in a pan over medium-high heat.

  2. 2

    Add tofu with salt, cook for 3 minutes.

  3. 3

    Add green beans, cook for 3 minutes.

  4. 4

    Add bell pepper and scallions, cook for 1 minute.

  5. 5

    Add tomato, cook for 1 minute.

  6. 6

    Add garlic, cook for 1 minute.

  7. 7

    Add basil, remaining sesame oil, soy sauce, lime juice, maple syrup, and chili oil.

  8. 8

    Cook until tofu browns and caramelizes, about 2-3 minutes.

  9. 9

    Serve over jasmine rice, topped with crushed peanuts and scallions.
