Ingredients

2 servings
  • 1 block(about 400g), drained and crumbled Super firm tofu
  • 230g, chopped Green beans
  • 1, diced Red bell pepper
  • 6, chopped Scallions
  • 1, diced Tomato
  • 5cloves, minced Garlic
  • 1cup, thinly sliced Basil leaves
  • 4 tbspSesame oil
  • 1 tbspChili oil
  • 60 mlSoy sauce or coconut aminos
  • 2 tbspLime juice
  • 2-3 tspPure maple syrup
  • 2servings (for serving) Jasmine rice
  • as needed(for topping, optional) Crushed peanuts
  • a fewpinches Salt

Steps

  1. 1

    Heat 3 tbsp sesame oil in a pan over medium-high heat.

  2. 2

    Add tofu with salt, cook for 3 minutes.

  3. 3

    Add green beans, cook for 3 minutes.

  4. 4

    Add bell pepper and scallions, cook for 1 minute.

  5. 5

    Add tomato, cook for 1 minute.

  6. 6

    Add garlic, cook for 1 minute.

  7. 7

    Add basil, remaining sesame oil, soy sauce, lime juice, maple syrup, and chili oil.

  8. 8

    Cook until tofu browns and caramelizes, about 2-3 minutes.

  9. 9

    Serve over jasmine rice, topped with crushed peanuts and scallions.
